Roasted Asparagus, Blue Cheese, and Green Onion Frittata

  • 1/2 lb Asparagus
  • 5-6 Green Onions
  • 1 Tbs Coconut Oil
  • 6 Large Organic Eggs
  • 3/4 Cup of Almond
  • 1/4 tsp Sea Salt
  • 1/2 Tsp Black Pepper
  • 1/4 Cup Crumbled Cheese
  • Blue Cheese for Topping
  • Green Onions for Topping


Step 1

Preheat oven to 400˚ Oven safe Skillet Step 1 Separate the top half of the green onions from the bottoms, dice and set aside for topping, the remaining green onion dice, Remove bottom spongy/hard portion of Asparagus usually around 1/2 - 1 inch. If the green onions or Asparagus are overly thick slice in half or quarters so they cook evenly and throughly. Toss Green Onions and Asparagus with melted coconut oil ( or place ingredients into oven proof pan with coconut oil already melted on the bottom- making sure to Toss/Coat ingredients) Roast until Tender @ 10-15 mins

Step 2 While the Green Onions and Asparagus are roasting, whisk together Eggs, Milk, Pepper, and Blue Cheese. Once the Asparagus mixture is done set it aside, add a 1/2 tbs of coconut oil to pan and pour egg mixture into hot oven proof skillet and let cook for @ 2-3 minutes. After the egg mixture has cooked for 2-3 minutes, layer in your green onions and asparagus and continue to cook until the bottom starts to set.

Step 3 Transfer skillet to oven and continue to cook for another 8-10 minutes.

Step 4

Step 4 Serve topped with your extra Blue Cheese and Green Onion tops.
